Bourbon Steak Opens Saturday at the Walt Disney World Swan and Dolphin

We’re thrilled to announce the official opening of Bourbon Steak Orlando, the 10th location of Chef Michael Mina’s award-winning modern steakhouse.

Nestled inside the Walt Disney World Swan and Dolphin, this newest addition to The MINA Group family promises an unforgettable dining experience at the heart of the world’s most visited vacation destination.

The celebration began with a ribbon-cutting ceremony on July 24, where Chef Mina was joined by MINA Group President & CFO Tyler Roberts, Walt Disney World Swan and Dolphin Area GM Sean Verney, and Tishman Hotel Corporation President Robert Snyder. The restaurant officially opens its doors to the public this Saturday, July 26.

A Menu That Redefines the Steakhouse

Bourbon Steak Orlando brings Chef Mina’s signature approach to the classic American steakhouse—elevated ingredients, exacting technique, and a touch of culinary magic. The menu opens with a signature welcome: duck fat fries served with an array of house-made sauces in place of traditional bread service.

Highlights include:

  • Michael Mina’s Tuna Tartare, prepared tableside with quail egg, pine nuts, mint, and habanero-sesame oil
  • Black Truffle Agnolotti with burrata and truffle butter
  • Hay-Smoked Tomahawk Ribeye, dramatically presented tableside
  • Maine Lobster Pot Pie, a Bourbon Steak classic served in a copper pot
  • Miso Broiled Sea Bass, Big Eye Tuna Au Poivre, and a range of Wagyu and dry-aged steak selections

Sides like Black Truffle Mac & Cheese and Jalapeño Creamed Corn round out the experience, while desserts—from the Key Lime Napoleon to the “On the Rocks” Root Beer Float—offer playful, decadent finales.

The wine list is a global journey through Old and New World vineyards, carefully curated to pair beautifully with the menu. Meanwhile, the cocktail program leans into both classic refinement and modern creativity, featuring rare bourbons, single-barrel selections, and inventive creations like the yuzu-and-peach-forward Fruit Ninja and the spirit-free Fairweather Friend.
